This unusual fish is also known as Saint Peter’s fish because of the large dark marking on its side, resembling a thumb print from when it was pulled out of the Sea of Galilee, if I paint this fish it’s my thumbprint that I use. John Dory comes from the French ‘jaune dore’ meaning golden yellow, which it is, the majority of John Dory are caught in the Southwest of England. Try with: Lemon butter or with a dill sauce
